A Good Friday Fry Fish - An Easter Tradition In Trinidad & Tobago
Like so many places around the world, food plays a central role in a lot of our cultural traditions here in Trinidad & Tobago. The tradition of eating fish on Good Friday is rooted in Catholic and Anglican customs where followers of the faith abstain from eating the meat of animals which are considered warm blooded like chicken, lamb, beef and pork. However fish is allowed. This practice of abstinence is meant to share in Christs' sacrifice. And while I grew up practicing islam in a muslim household, this tradition is not something unfamiliar to me. And that's the beauty about living in Trinidad & Tobago. We often pay respects to other traditions that make up the cultural tapestry of this nation through food. Of course you could go to the grocery and pick up chilled or frozen fish to make your Good Friday Meal. But personally, I enjoy taking a drive up the North Coast Road to head up to Las Cuevas to get fresh fish from the Fishing Depot. Some people get squeamish around the blood and guts that's an inextricable part of buying fresh meat. But just like going to farms and seeing farmers work the land and reap their crops, I appreciate the experience as a reminder that food does not magically end up in the supermarket and our plates. There are real people doing actual labor who we depend on for sustenance. And I think it is always important for us to celebrate all the people who play a part in feeding us. On Good Friday King Fish also known as King Mackerel is the popular choice. So it was only right that I bought some but for the Fry Fish that I made for my Good Friday meal I opted for Bachine which is a type of Barracuda. It is much cheaper than King Fish, coming in at half the price. Zanzibar is one of the most fascinating places in Africa, known for its white sandy beaches, bustling spice markets, and rich Swahili culture. But beyond the beauty and tourism lies a dramatic history that few people know. In 1964, Zanzibar came dangerously close to becoming its own independent country, an event that could have reshaped the political landscape of East Africa forever. For centuries, Zanzibar was a crossroads of civilizations. Arab sultans, Indian traders, and African communities built a thriving economy centered on cloves, ivory, and the Indian Ocean trade. Stone Town became a melting pot of languages, cultures, and commerce. But beneath the prosperity, tensions simmered. The majority African population lived under the control of Arab elites, and the legacies of slavery and inequality left deep social divisions. When the British finally declared Zanzibar a protectorate and later handed over independence to the Sultan’s Arab-dominated government, the majority of Zanzibaris felt sidelined, setting the stage for revolution. Just weeks after independence, the Zanzibar Revolution erupted. Led by John Okello, African revolutionaries overthrew the Sultan in a swift and violent uprising, creating the People’s Republic of Zanzibar. Thousands of Arabs and South Asians were killed or fled the island, while Abeid Karume took leadership of the new government. Zanzibar was free, but suddenly vulnerable. The Cold War superpowers quickly turned their attention to the island. Western nations feared communist influence, while the Soviet Union and China saw an opportunity to expand in East Africa. Zanzibar was independent, but isolated and at the center of global strategic interests. To protect Zanzibar and stabilize the region, Julius Nyerere of Tanganyika orchestrated a union just three months later. The two nations merged to form the United Republic of Tanganyika and Zanzibar, soon renamed Tanzania. While this union brought political stability and protection, it also silenced Zanzibar’s full independence. Key powers like foreign policy, defense, and economic control shifted to the mainland, leaving the island with semi-autonomous status but limited real authority. Many Zanzibaris felt their revolution had been absorbed, but others saw the union as a necessary step for survival. Today, Zanzibar maintains its own president, parliament, and flag. It even has semi-autonomous immigration laws, yet the ultimate decision-making power rests with Tanzania’s central government. Waves of Zanzibari nationalism continue to surface, and parties like the Civic United Front (CUF) push for greater autonomy. While tourism now drives the economy and Stone Town thrives as a UNESCO World Heritage Site, questions of identity and independence linger. Zanzibar’s past, revolution, and political compromises remain central to understanding its unique place in the region.
