Discover more about Lillehammer 2016: http://www.olympic.org/lillehammer-2016-youth-olympics Taco stuffed sweet potato recipe: 4 large sweet potatoes 1 tbsp oil 1 small onion, finely diced 1 red bell pepper, finely diced 2 cloves garlic, minced 1 tbsp taco seasoning 1⁄2 cup canned black beans, rinsed and drained 1⁄2 corn 1 cup cheddar cheese, shredded Scrub sweet potatoes with a vegetable brush. Prick sweet potatoes all over with a fork. Place them in the microwave for approximately 10 minutes or bake them until they are tender enough to pierce with a fork. Allow them to cool slightly. In a large skillet heat oil over medium high heat. Add onion and red pepper and sauté until they begin to soften. Add garlic and taco seasoning and cook for an additional 30 seconds or until they become fragrant. Add black beans and corn and cook until all of the ingredients are heated through. Preheat oven to 375°F/190°C. Place sweet potatoes on a baking sheet lined with parchment paper. Slice sweet potato down the centre and squeeze to create an opening. Spoon the black bean mixture into the center. Sprinkle with cheddar cheese and bake for 10 to 15 minutes. President Donald Trump met with his national security team in Washington for more than an hour on Tuesday to discuss the escalating Middle East conflict, according to people familiar with the matter, fueling fresh speculation that the US is on the verge of joining Israel’s attack on Iran. Trump spoke with Israeli Prime Minister Benjamin Netanyahu following the meeting, according to a White House official, as speculation swirled around how the US president might proceed. White House officials declined to comment or issue a statement following its conclusion.
