Making Potato Pudding the way my mother makes it, with the wood fire on top and bottom. ------------ Ingredients: 2 pounds grated sweet potato 1/2 pound grated yellow yam 1 grated dry coconut 1 cup flour pinch salt vanilla freshly grated nutmeg allspice cinnamon brown sugar to taste Directions: 1. Juice grated coconut and extract the milk 2. Add all spices and sugar to coconut milk 3. combine the grated yam with the grated potato 4. Mix wet ingredients into potato and yam mixture 5. Place in oven or wood fire depending on preference or convenience bake for 1 hour. do bake test and reduce heat. A parade of life-sized animal puppets has completed a 20,000km journey to reach the Arctic Circle. The Herds includes elephants, giraffes, antelopes and lions made from recycled cardboard, plywood, and metal. The project began on 9 April in Kinshasa, the capital city of the Democratic Republic of Congo and travelled through Africa and Europe to raise awareness about the dangers of climate change.
