Älplermagronen (Alpine Macaroni) Recipe:
3 red skin potatoes, cut into cubes
200g gluten-free macaroni (I like brown rice macaroni)
1 tbsp olive oil
2 large onions, thinly sliced
1 cup smoked cheddar cheese, grated
½ cup skim milk
4 apples, cored and quartered
2 tbsp lemon juice
2 tbsp water
For the Älplermagronen:
In a large skillet heat oil over medium-high heat. Add onions and fry until they become golden brown and caramelized. Set aside.
In the meantime, fill a large pot with water and bring it to a boil. Add potatoes and cook for about 5 minutes. Add pasta to the same pot and cook until it becomes al dente. Drain potatoes and pasta in a colander.
In a baking dish layer half of the pasta and potato mixture, half of the cheese and half of the caramelized onions. Repeat the layers. Drizzle the milk over the entire dish. Cover with aluminum foil and bake at 375°F/190°C for 25-30 minutes. Serve with homemade applesauce.
For the homemade applesauce:
Combine apples, lemon juice and water in a medium saucepan. Bring mixture to a boil over medium-high heat. Reduce heat to medium-low, cover and simmer for 30 minutes. After 30 minutes remove apples from heat and puree with an immersion blender or, for a chunkier applesauce, simply mash apples with a potato masher.
